Eggplant Parmigiana

I received an eggplant in last week’s farm box so I decided to make this.

I cut the recipe in half.

The breaded eggplant on its own would be wonderful.  I couldn’t resist tasting one piece.

The recipe is below.  This does take a bit of time so start early in the day and do as I did and make it ahead of time.  It is truly worth the effort.


Chicken Cordon Bleu

This is another one from Simply Good.  I made it tonight and it did take a bit of time.  I had sauce leftover which I think might be pretty nice on some pasta later this week.
